About Me
When my son was first diagnosed with severe food allergies, I didn’t know where to start. I spent all my free time reading articles and reaching out to other food allergy moms online. Our family’s diet heavily consisted of gluten and eggs, so how was I going to figure out how to cook everything and keep my son safe? I couldn’t even consider going out to eat let alone taking a vacation at first.
The first meal my son had that I didn’t make was by a Disney Chef.. This is at the Crystal Palace at Walt Disney World. Now fast forward six years and we love to travel! It takes some time and research, but it can be done safely and everyone (even mom!) can have a fun and relaxing vacation. I love to create and I am usually cooking, baking or making some form of craft. I love taking a highly recommended recipe and make it allergy friendly. Baking is a challenge now that tasty treats have to be gluten and egg free, but we still manage to eat lots of goodies. I also love hearing from other allergy parents and how they cook or bake. I fell in love with Disney World as a little girl and I have continued to visit again and again. I have been to Disney as a little girl, in my 20′s with friends, pregnant (Yes, it’s possible to have fun while pregnant), with a small child, and with a preschooler with severe food allergies. Disney is fun at any age and will work for any type of family! While I love theme parks (I have been to both Universal Studios – Florida and California), I also love Washington D.C. (I got engaged there), Las Vegas, and the ocean (I love just about every beach!). What is your favorite vacation location?
